Pekin Duck

  • Take one female M3 Pekin/Aylesbury cross
  • Put in breeding pen to mate with male of similar breed
  • Remove eggs to hatchery
  • Incubate for 28 days
  • Place newly hatched ducklings in brooder for about 2 weeks
  • Remove ducklings to rearing shed, 4,000 to a shed is fine but keep water to a minimum because, when excess water mixes with faeces, ammonia fumes build up and burn off feathers and skin. Nostrils and eyes may become blocked with food and dirt but this can be disregarded
  • Feed a high protein diet including soya and fishmeal in dry pellet form
  • At 7 weeks round up birds and pack in crates
  • Transfer to abattoir
  • Hang birds on shackles, pass over electrified water bath for stunning, slit throats, pluck and butcher
  • Rub duck meat with Chinese spices, steam and finally roast until crisp
  • Serve with Chinese pancakes, spring onions and Hoisin sauce
